I need this full number to look up a receipt for a transaction I paid with my physical card. Wallet will only show you the last 4 digits and has no indication of what to do if you need to see every digit. I know it's a security feature for this to be hidden but there has to be a way for me to see this.

No, it looks like you need to pay closer attention to the instructions given.
On your iPhone:
Wallet->Apple Card->tap 
->Card Information (authenticate) and you will see your complete card number, expiration date, and three digit CCV code.

Hi, you can find the complete number in your Apple Card, in the Wallet App on your iPhone and in Settings >> Wallet App, on an iPad. Here are the steps,
On iPhone
.You can also see the last four digits of your Physical Card number and your Device Account Number.
