Reset and Family sharing
If I reset my iPhone will my parents see that I left family sharing.

With Family Sharing, this is tied to your Apple ID so erasing the iPhone wouldn't remove the Apple ID account from a Family Sharing group. If you're wanting to leave a Family Sharing group, you would need to follow the steps shown within the section labeled "Leave your family group" of the following resource. When leaving the Family Sharing group, the organizer would know if you're still part of the group or not.
