…which is the better format, OTF or TTF for installing fonts in a 2017 iMac using Big Sur?

I'd go with OTF, if possibile. Anyway, TTF fonts are supported on macOS without problems.
PostScript fonts, on the other hand, can be difficult to handle nowadays. Adobe announced that Type 1 fonts won't be supported anymore beginning January 2023.
