How do I uninstall apps on a MAC desktop? I don’t want some of my apps on my 2009 to transfer to my 2021 MAC.

Uninstallation depends on the type of App. some can simply be dragged to the trash from the Applications folder in Finder, other's will need their own Uninstaller to remove them.

+1 on Phils thoughts. The wisest thing to do is first look within the app or it's folder in the Applications folder if the developers of the app provided an uninstall utility.
In most cases simply dragging the app to the Trash is all that is required.
