You cannot. Apple does not offer a 500GB option for iCloud. 50GB, 200GB, or 2TB. You can downgrade to 200GB.

Follow the steps here: link-> Downgrade or cancel your iCloud storage plan - Apple Support

and select the 200GB plan.
