Do people still buy time capsules or AirPort Extreme’s still?
I have noticed that Apple.com does not have time capsules or airport extreme’s do people still buy these and if so where is the best and most trusted place to get one.

Plenty sell second hand on eBay. Whatever other second hand sellers you have where you live.
I would be hesitant for people selling them new often overpriced. Production finished in 2018 and it is really time to buy other products. Apple sell wireless mesh from Netgear (Orbi), Eero and Linksys in their stores. Mesh is a lot better at covering your house with wifi. And the Time Capsule is well out of date using only SMB1 which is now a major security risk and AFP. For backup I would look at a NAS like Synology for network backups.
