Note that a backup can only be used to restore to an iOS device; the contents of a backup will not be accessible on your Mac. However, you can use iCloud to sync data between and iOS device and a Mac. On the iPhone go to Settings[your name]/iCloud and turn on the switches for the data you want to be able to access on your Mac.

On your Mac open the Menu/System Preferences. Click on Apple ID at the top (on older Mac OS versions, if there is no Apple ID button, click on iCloud). Then turn the same switches on that you did on your iPhone.

Once you have set it up like this your Mac and your iPhone will remain in sync in near real time; anything you add or edit on one device with also be updated on the other.
