Email folders

I like having the predictive email folders set-up but occasionally I do not want to move a particular email into the predicitive folder. I am using a Mac but when choosing to 'move' I cannot find a way to move the email to an alternative folder - only the predictive one seems to be an option, what I am missing? Thanks
