I am concerned that someone had access to my phone and may have airdrop files/pictures to their phone during that time. Is there a way for me to see a record of airdropped items on my phone or a log of received airdropped photos on their phone?

No there is no log of that.
Did this person have your passcode to enter your iPhone? If not, the could not AirDrop anything. If you gave them your passcode, I would think you trusted them.
