I purchased iCloud storage for .99 a month but recently upgrade to an iPhone 12 with 256 GB of storage. If I cancel my subscription will I lose the data on my phone?

No, but if your iCloud storage is full you won't be able to sync any more data and your iCloud email won't work. The more storage you have on your phone the more iCloud storage you are likely to need since iCloud mirrors what's on your phone in order to allow other devices signed into it to sync the data. If you don't want to use iCloud for data you can turn syncing off and just leave the email if you're using it. You might need to clear out data in iCloud if you have more then 5GB there.
