I believe a family member has compromised my Apple ID and is still controlling my iPhone how do I delete and erase family sharing ive never opened the app or shared with anyone or my son this person has set up screen time on my phone please help

is it possible to turn off erase and delete family sharing?

Family Sharing won't do the things you describe. If somebody set up Screen Time they had to do it while personally holding your phone which would require you unlocking it for them. Change the passcode on your phone.
