If I uncheck app from "Choose data to back up" list what happened?

What is that means "Do you want to turn off Excel backups and delete the backup data from iCloud"?

If I delete this, will this app install on my iPhone when I restore it from backup? Or it means that app will install but without any data, like from the scratch?

iPhone 12, iOS 14

As long as the app remains on your iPhone, the app would return. However, if you do not backup the data on the app, the next time you backup the iPhone and your current backup is overwritten, that data would be gone. Any restore of your phone would not include the data.
