As outlined in the article here: Use Messages on your iPhone, iPad, or iPod touch "When you delete a message or conversation, you can't get it back. So make sure that you save important information from your messages." you can view those details and more in the section "Delete a message or conversation."

If you use Messages in iCloud, deleted messages will sync across all devices. You can view information here: Use Messages in iCloud

If you don't use this feature, and you've recently created a backup to a computer you might be able to restore previous messages by restoring the backup.
