It’s been three days since I got a new iPhone 11. At the Xfinity store they took my old iPhone 8 and transferred the information from it to my new iPhone 11 but it’s been three days now and many of the apps are still loading. How long does it take?

Those apps will only load while you are on a stable wi-fi network. Once you get off wi-fi, they will pause again, and should restart when you connect to wi-fi again, but sometimes won't.
