Hi, I just wanted to find out how much money I’d get if I trade in my iPhone 12 which has just been taken out the box and in original packaging still and how much I’d get for it If I was to trade it in for an iPhone 12 Pro Max or an iPhone 12 Pro

Apple is not accepting an iPhone 12 for trade in at this time. If it was purchased within the last 14 days from an Apple Store, it can be returned for a full refund. If not, you will have to sell it yourself and then buy the phone you want.

I think at this time the iPhone 11 Pro Max is in fact the highest level that you can trade in right now. Perhaps your best option is to sell it and use that towards your new iPhone as kb1951 suggests.
