How do I change my battery to percentage in the right hand corner of my iPhone

You have to go to the Control Center to see the percentage.

Or...... use the battery widget on your home screen.

At present, iPhones that utilize Face ID just display the battery level icon at the top corner of the screen. You cannot change that.
