why is the first letter of each new sentence capitalized?

System Preferences > Keyboard > "Text" tab:

Uncheck "Capitalize words automatically" and see if that gives the results you desire.

⚠️ NOTE: that is for Apple apps. Other apps like Office may have a separate capitalization preference the overrides the Apple setting

Because that's correct procedure in English.
