I have a series 3 Apple Watch and iPhone 7 are you able to update series 3 watch to 7.5 or not?

I have tried to update my watch to 7.5 but it keeps coming back saying it is unable to install right now my grandson has also had the same problem he unpaired his watch from his phone when prompted by Apple and is now unable to pair his watch to his phone now! What should we do?
