Resetting old phone
If I erase all content and settings on my old phone will it erase everything on my new phone ? I have already backed up my information from my old phone to my new phone.

Since you have been able to transfer your information to your new iPhone from backup, you are good to go to delete the older iPhones contents. Erasing content on one device will not impact another device. You can also read more about what to do before parting with your old iPhone at the link below.
