Does anyone have a workaround for the problem of iPhone mail sending from the wrong address on iOS 14.6? This problem first occurred a long time ago and was apparently fixed in 14.1.

Thanks, but this does not address the problem. I use the iPhone Apple Mail compose icon as shown at left in the diagram you sent, and I also use Reply and Forward. I have email addresses at Cox.net, Yahoo.com, Gmail.com and Me.com, which Apple usually changes to Mac.com or iCloud.com. I have several aliases for my Me.com address, but I always want to send from only one of them. iPhone Apple Mail often changes it to a different alias, and I have even had it changed to one of my non-Apple addresses.
It depends on where you are choosing the new mail option. See the pic below which is self-explanatory.
