I am planning to buy a scanner, probably an Epson Perfection V600. Does it work with my Mac mini (M1) running Big Sur? Does anyone have experience with this or would like to suggest what other scanner would be better for scanning photos given my computer and operating system?

Just from a quick glance the Epson Perfection V600 is compatible with macOS Big Sur,

Make sure the operating selector is set for macOS 11 Big Sur then click on the plus
buttons to reveal the downloads available, click on the arrows to the right for more
information and the download button
As always do full research on the product and macOS Big Sur especially on M1 models.

A lot of V600 users have reported issues with Big Sur and the M1 platform, despite Epson showing compatible Big Sur drivers. The fallback, paid scanning application VueScan Professional does not support this scanner without functional Epson drivers installed.
Epson has not released any newer Big Sur ICA drivers for this scanner since Jan 2021. They did release on July 2, 2021, a driver and Scan 2 Utility v6.4.99 package that may fix the Jan 2021 driver issues, or not.
