You can’t. Backups must be done before you need them; after is too late.
If you synced data to iCloud that content will come back after restoring the phone per the Related Article above.
For the future, go to Settings/[your name]/iCloud and turn on the switch for iCloud Backups. Then charge your phone overnight, every night, and you will always have a current backup.
