Elevation gain is reported in the Hiking workout by default:

However you can add it to other workouts as well. In the Watch app on your iPhone, select [My Watch] Workout > Workout View > Multiple Metric. Select a workout such as Oudoor Walk or Outdoor Run and tap Edit. You can then replace one of the five default metrics with Elevation Gain.

I had all this done but still only got elevation max and min, not Gain. Called apple support. They helped me reset calibration data. Now I do get the Gain, but the Distance is off ((
