How to show elevation GAIN on my fitness app? It shows elevation max and min only

Elevation gain is reported in the Hiking workout by default:

Workout types on Apple Watch - Apple Support


However you can add it to other workouts as well. In the Watch app on your iPhone, select [My Watch] Workout > Workout View > Multiple Metric. Select a workout such as Oudoor Walk or Outdoor Run and tap Edit. You can then replace one of the five default metrics with Elevation Gain.
