How to update iOS on my phone so I can get my new watch to work..

I have an iPhone 6 and I’ve just bought a Apple Watch series 3,but it’s saying that I need to update iOS. Now I have deleted apps to make room as well as done a backup on my computer as well I’ve had it on charge next to my watch last night, but still nothing.

You need an iPhone that can run iOS 14.x to setup that Watch. Your iPhone 6 cannot run iOS 13 or later due to insufficient RAM and it cannot be added. Either return the Watch for a refund or get an iPhone 6s or later.
