I'm afraid there is a complete misunderstanding on what is going on here. Your last statements have confused me. Now you are referring to a number of different things with activity and health. I though you were referring to a single complication in that photo, however it seems you are looking at much more. The Watch face you are looking at in the photo is the Infograph. Do you have the 40mm or 44mm case size? You are looking at numerous complications displayed, in all 4 corners of the Watch face, then the 4 areas of the inner Watch face. These can be complications for Apple apps or features, or they can be for 3rd Party apps if they are programmed for complications.
I'm no longer sure if you are referring to a single complication, which is what you seemed to ask at first, but then in your last post you mention something about an app getting things from activity and health. If you have the Watch, which it seems you do, go to your Face Gallery and take a look at the different complications available for that Watch face, and then you can check out other apps in the App Store to see if they offer other complications you feel are necessary.
And you can share with Apple your distain with their developers by going to the Feedback link at www.apple.com/feedback/watch.html
Sorry I missed this earlier, seems the AQI has been added for Canada for iOS 14.7 so it may be available in the new watchOS as well although the release notes for watchOS 7.6 does not indicate it. This is from the iOS 14.7 release notes.
All I know is that I see nothing in the watch complications or the watch app or health app
I even checked all possible faces and saw nothing resembling the image I yanked from reddit to post here
It seem that Apple has been sluggish to update their feature page, so much for buying my series 6 watch on release day
The photo that you shared is the Infograph face. If you go to the Watch app on your iPhone, you can find it there. I just tapped on the first one, in the list. Understand I'm in the US, so we have the Weather complications. If you tap on a complication, scroll down to Weather and AQI is there. But in finally adding the complication to a face and putting that on my Watch, it isn't the one you are showing. This one that is marked Air in the photo is obviously something else. Unless you are referring to something different. Is that the complication you are referring to, or did I guess wrong?
Speaking with Apple I discovered I needed to use a different face but I was not able to perfectly replicate the face as above but I was able to add AQI
Was not able to find steps or heart factors etc suggesting some feature or other has not been provided yet
Steps is not a native complication. You must be using a 3rd party app for that.
What heart factors are you talking about?
The face above looks to be the infograph, no?
If so AQI is a complication for that one but it is a number not like on the face above, again that may be a 3rd party app
I inquired on the reddit forum where I saw the image and hence my query
AFAIK the image shows a third party app that provides what should be intrinsic from the activity app and the health app
Evidently Apple's developers are not as eager as I am to use every possible feature on my series 6

Thank you. My AQI on the Infograph shows a number as well, not that "Air". I didn't even think about a 3rd party complication. Thanks for that assistance.

I now more or less have it working as desired but that was after the latest watchOS surfaced
