I bought my 12 year old daughter a new 8th generation ipad yesterday and when we were looking last night I realized it has all my photos off my iPhone on it. I have over 10,000 photos and memes and stuff but I want to keep the photos on my phone but delete them from her iPad. How do I do this ? And prevent them from going over via cloud I guess each time she visits

Toggle off iCloud sharing in photos on the iPad. If you don't, and erase the photos, it will delete all of your pictures too.

Sounds like you logged the iPad into your own Apple ID instead of creating a separate Apple ID for your daughter (as part of a Family Sharing group) and adding that to the iPad. Sharing an Apple ID between people rarely works out well in the long run.
You say "She won’t have an Apple ID". Why not?
You really need to set up a separate Apple ID for your daughter under a Family Sharing group. (Create one if you don't have one already.)
