Is there a way to retrieve old text messages after I’ve deleted them from my iPhone?

If you sync messages with iCloud, no. If you don't sync message with iCloud AND you have a backup from before you deleted the messages, you can restore your phone from that backup, but your phone will be restored to the date the backup was made, meaning messages sent or received after the date the backup was made will be gone.
