How do I unsubscribe from
this? I followed instructions to unsubscribe and it won’t let me complete the process

Open Settings. Tap on your name. Tap Subscriptions. Do you see the subscription? Tap on it. If it just lists options for renewing, and doesn’t have a Cancel button, it has already been canceled. An expiration date will be displayed; the subscription will still be active until that date because you already paid for it.
