every time I download I tunes , they tell me can't open it use another version

There is no version of iTunes for Big Sur, or Catalina. See below.

There is no longer any iTunes. Its functions are now handled by separate apps - Music, Podcasts, TV, App Store. each of these works much the same as the individual parts of iTunes.
