My employee left the company and left iPhone SE (2) locked screen and no iCloud login/no Apple ID, no email for login. Could You recommend how to recover iPhone for using the like-new device? I don't need information from the phone, just I would like to use it again.

Without that data, you can't bypass activation lock. Nobody can provide it to you.
Do you have the original bill of sale?
