Welcome to the Apple Discussions. When printing in the last print window where the Print button is visible there is a drop down menu where you can select the paper type in the Quality and Media section.

Rather than have to find and select the paper type each time set all of the settings for that type of print job and use the Presets drop down menu to select Custom and give it a name like Epson-matte paper. Then all you need to do is select that preset and hit Print.

unfortunately i don't get the same dialog box in iphoto 09 as you do. mine has the top 2 rows as yours then from copies down to an including the preview picture is missing, then i get the last line, hence the options i want are not available.
how did you include the screen shot ? i have a grab of the box but can't get it into this post.
thanks for trying
