I want to change my iCloud email, but without deleting all my data. If I am able to, what are the steps to do so?

If you mean that you want to change the email address that is used for your Apple ID, then see:

Change your Apple ID - Apple Support

What to do after you change your Apple ID or password - Apple Support

If you follow the above procedure, you will not lose any of your data.
