Quality of purchased music
Now that Apple Music offers Hi-Res and lossless music, should we expect our purchases to be obtainable in such quality (if offered by the artists)?
And what about spatial audio music / Dolby audio (if supported)?

Not if you buy it from the iTunes Store. All music downloads sold in the iTunes Store are still in AAC/256, not lossless. The recent lossless announcement applies to the Apple Music streaming service, not to the iTunes Store.
if you are in the market for lossless or hi-res music downloads, you can purchase tracks from HDTracks.com, Qobuz.com, etc., and add them to your iTunes/Music library.
