Big Sur 11.5.1 update resulted in changed Image Capture.app behavior on my 2019 iMac

Greetings:

Coincident with doing the Big Sur 11.5.1 update, every time I start up my 2019 iMac the Image Capture.app opens on its own and shows a connection to my Epson ET-3760 multifunction printer with "waiting for scanner" displayed.

In System Preferences > Printers & Scanners, deleted and then reconnected to the printer, but the problem remains.

The multifunction printer is connected to the iMac via AirPrint:

Any guidance to stop this behavior appreciated!

Right after posting this, I thought I should take a look at the Login Items list just to check Apple Menu > Users&Groups >Login Items and sure enough, Image Capture had somehow been added to the list.

Have removed it, and am now testing if this solved the problem.
