How to disconnect an old device from my Apple account?

Someone has possession of an old phone 7 of mine and is using an old Apple ID to get into my emails and my new Apple IDs. I created a new Apple ID and completely wiped my phone, how do I disconnect this iPhone 7 from having any access to my new iCloud and my phone

They would only be able to access your account if they have your password.
