I would like to create a new apple ID for my devices but I don't want to lose everything.
I would like to keep all Health data and goals obtained in "activities"
Do you know if it is possible to transfer this data from one account to another?

Look into using Family Sharing to continue to be able to use items purchased with one Apple ID with other Apple IDs.

Why do you want to create a new account? You can change information on the old one and save yourself a lot of trouble.

To answer your question:
I am considering doing this due to some limitations imposed by Apple.
I love having an order and my account is almost 11 years old. At the time I used to download any application that was free and now I have a lot of junk in the list of "purchased" applications.
Unfortunately I can hide but not permanently delete applications from this list
A second (and more futile) reason is that I would like to change the username of this community and this is apparently only possible with a new account
For your second reason, I have notified the hosts that you would like to change your community user name. If they are willing to do that, they will contact you by email.
