If I install Windows 10 using Bootcamp on my Mac Mini(2018) using Mac OS 10.14.6 Mojave now and then update to Mac OS 11.x Big Sur will Windows still work?

Yes, Windows will continue to work. Do not erase partitions during Big Sur upgrade. Be aware that Big Sur has EFI issues with Windows. You may want to stay with Mojave, if you can.
I hadn't thought of Catalina. Is the Bootcamp Assistant still available in Catalina? My situations twofold in that I have a project ahead of me whose software requires windows to run and my iPhone X will no longer interface with my computer.
I did as you wrote and installed the 'driver'. When I opened iTunes after that, the iPhone icon appeared and that will allow me to talk to the phone thru iTunes. (Before when I saw the warning I did not click on 'install' because I was afraid it would upgrade the MacOS to Catalina or Big Sur). I should be able to move music from my Mini to the iPhone now.

Thank you for reply. I'd stay with Mojave, but the upgrades of my iPhone X will no longer allow it to connect with iTunes. That is unless I'm doing something wrong.
Do you want to consider macOS Catalina as an option, instead of Big Sur?
Bootcamp Assistant is available on all Macs and works on all Intel Macs. It is not supported on Apple Silicon.
I'm taking your advise and staying with Mojave and install Windows with Bootcamp. I'll find another way to sync my iPhone X to my Mini. Thanks for the help.
What is the error you see when syncing your Mac and iPhone X?

Apple should clearly state the nature of the update to avoid misinterpretation of the message as indicating that a macOS update/upgrade is required.
Please click on Install and post any error messages you see. This is normal behavior. There is a Mobile device 'driver' which should be installed.
Please do not update/upgrade your macOS version.
