Apple Watch series 6 always on display: inconsistent behavior

Dear community. I refer to question https://discussions.apple.com/thread/251843801?login=true , titled "Apple Watch series 6 always on display not working!", but meanwhile closed.

I also purchased an Apple Watch Series 6 today, installed latest watchOS release 7.6.1 and can report that I have noticed two different behaviors of the "always on display"

1. dimmed version of current watch face (mine is the Infograph watchface), without the hand for the seconds
2. current time, displayed as digitals in the upper right corner (e.g. "10:09")

Anyone an idea where this comes from, whether there's a setting for this behavior?
