i want to buy an unlocked phone and don’t want to go through my carrier. Will the SIM card work in this new phone? Also, it gives you three options to choose from when purchasing an unlocked phone. Not sure which one to choose.

The SIM will fit and should work. However, if you want 5G service, you will need to get a new SIM from your carrier.
What are the options you're confused about?
The iPhone 11 doesn't have 5G so their SIM should be fine.
