Can I revert to older itunes?

Thank you. We don't have a television, so for many years have downloaded movies and tv programs on iTunes to our laptops. I could choose HD or SD (always SD) and easily review information before I would rent or buy. Am I missing something; it seems that the videos are intended to be downloaded to or through an Apple device with fewer choices? My current workaround is to use an older laptop that still runs the older iTunes version. I have been in the Apple world since 1984, so I am used to new formats used when hardware and software are upgraded. Is there something I have overlooked? If so, apologies for bothering you fine folk.
