Whenever I try to sign out of My AppleID on my iPhone I get a message about losing files

When I go to my AppleID settings and try to sign out I get a message asking if I want to keep a copy of my data. Why does it sound like all of my data will be erased just by signing out of my AppleID account? Can I not sign out and back in without losing Data? Sorry if this is a dumb question.
