I received my trade-in kit and it was completely empty aside from the foam. No instructions, no return label, nothing! So I requested a new trade in kit and have received it with, yet again, nothing in it other than the foam. Is this how it always comes? If so how does the courier know where it's going with no return label?

So I managed to get in contact with someone in the support team and they said that this is normal, the kits don't come with a return label or instructions, just put the item in the box and the courier will take care of the rest. Wish they would have included instructions saying that!
Things have changed since March 2021 when last updated the Trade-in Directly from Apple. Please, double check Directly with Apple and reconfirm.
From your description - this almost sounds a Man-in--the Middle getting a Free computer under the guise of Trade-in.
There is no courier company that can pickup an item without cable Affix with the From person and Destination address. Have working the Transportation Business for 20 years moving things by Ship, Airplane, Rail and Truck and never ever have I heard of this.
Definitely, not normal. FWIW, I have used Apple's Trade-in program for years. Regardless of what 3rd-party they use, I always got a shipping container that included foam, a shipping label and a set of instructions ... as a minimum. I also received a number of emails from this 3rd party during the overall process.
Connect Apple Directly and explain the situation. And No - this is not normal. Have used the Trade-in Process from Apple several times and never ever experienced what you describe above.
You're not talking to Apple here.
Further - think of the logic of this. If you write a paper letter, put in envelop, seal it with no return address and not To Address and drop in the Mail System - what do you think would happen ? ?
