Does anyone know if you can set the iPhone 12 to show the percentage of battery charge instead of the highlighted battery?

On the task bar there is no way due to space limitations. But you can swipe down from the top right corner of the screen, and the percentage will be available to see there.
Alternatively you can add a Widget to one of the home screens with the Battery Percentage: Use widgets on your iPhone and iPod touch - Apple Support
