So would you say the lag is more with web based functions? Like video rendering/buffering, or websites not loading fast? Or are applications pausing to launch, freezing, etc.?
If this happened after upgrading, can you test in a new user account and/or safe mode? Otherwise I may have more suggestions if the lag is more internet based, cheers.

Download and run Etrecheck. Etrecheck is a diagnostic tool that was developed by one of the most respected users here in the ASC and recommended by Apple Support to provide a snapshot of the system and help identify the more obvious culprits that can adversely affect a Mac's performance.
IMPORTANT:
Before running Etrecheck assign Full Disk Access to Etrecheck in the Etrecheck's Privacy preference pane so that it can get additional information from the Console and log files for the report:
Also click and read the About info to further permit full disk access.
Copy the report
and use the Additional Text button to include the report in your reply.
Then we can examine the report and see if we can determine what might be causing the problem.
New issue. Only started after updating to 11.5.1.
Did a fresh reinstall with no change. I have 500 GB available storage. First aid completes with zero problems found. Malware run with no viruses detected. The next step I’m taking is installing 16 GB RAM x 2. But have to wait till Wednesday for tape kit. Any help or suggestions in the meantime will greatly appreciated. Cheers!

Something different. It appears like a cache issue, like when caches get so backed up in a browser that everything takes a few visible microseconds to load. Like audio not lining up with video, but with my AI design software. Item selections and such are visibly delayed. It’s maddening! Only started after installing 11.5.1.

If Yes, if the backup was done from a previous problematic system and migrate assist was use to setup again - it will have re-introduced the same problematic issue into the new fresh installation.
Your AI Design Software have you verified with the Developer if the version being used on this machine is in fact compatible with Big Sur. Just because it may have worked on a previous version of macOS does not automatically translates to work on Big Sur.
I don’t know if Migrate assist was used. If it is a standard baseline operation that functions w/o user choice, maybe? I ran a Cmnd/r at boot and chose to reinstall Big Sur from the menu.
I was using this AI version with Big Sur 11.5, and problems only surfaced with 11.5.1.
So are you saying this specific computer is Owned by a Company or Organization. It, computer may be Enrolled in a Mobile Digital Management Service - that would mean only they will decided was software can be installed on this computer.
If above is true - contact the people managing this computer to sort out the issue as there is zero we can do to assist.
It was still doing the same in safe and new user account. It was a systemic issue. Including Finder. Upgrading my RAM from a total of 8GB to a total of 16GB did the trick. … So far. Everything seems to be working as before now.
Very little information shared beyond " major lag ".
Is this a New Issue - if so what changes have occurred ??
Is this an Old Issue - if so what actions have been taken to resolve the issue ??
Are you experiencing the widespread caps lock / volume control / app switching freeze that appears a few hours after rebooting? Or something different?
Upgrading RAM did the trick.
Sounds good! Having enough RAM to support the processes you’re running, can’t go wrong with that! Glad you got it working again!
