So can I still stream music from my apple watch without needing connection to my iphone as I want to ru n using my apple watch without my phone. Is there a particular model which does't rely on your iphone connectivity?

Yes.
And if you have an Watch Wi-fi only model then your iPhone must be with you. See the (blue text) link in my previous post.
FYI: The Watch Wi-Fi + Cellular model share the same phone number as you iPhone (with a fee) that's why the iPhone provider must support it.
