Can I connect the new Imac 2021 M1 with an Imac mid 2011 so I can use the screen to display what I'm working on on the main imac 2021? I went to buy a thunderbolt cable today and I was told it was impossible. Is this correct? Thanks in advance

Sorry, that is not possible. Apple Silicon M1 devices and macOS Big Sur are not compatible with Target Display Mode.
