How do I keep MY music off iCloud

My music that I bought on iTunes continually goes to iCloud, a lot of them are grayed out. This is MY music that I bought before there was a cloud so essentially, Apple is stealing my music. Also, how do I keep my music OFF the iCloud?

Turn off 'sync library'. Apple is not stealing your music but making it available for other devices through the cloud.
