How to unpair Apple Watch from old iPhone?

Trying to pair my watch to new iPhone. I no longer have the old phone. When I go into the watch app, it will not let me select the my watch option to unpair from old phone. It only lets me try to setup new watch and when I scan the watch it says it is unable to connect Apple Watch.

To unpair from old phone;

From a web browser,sign in to iCloud.com with your Apple ID.

Go to Find iPhone.

Click All Devices at the top of the screen.

Click your Apple Watch.

Click Erase [device]. Select Next until the device is erased.

Click Remove from Account.
