I have Big Sur, how do you backup an iPhone, that you cannot turn on (screen is black) to a Mac or iCloud before sending the device in for service?

If you can't turn it on, you can't back it up.
If it is on but the screen is blank, you can't back it up because you can't unlock the phone.
Backups need to be made and maintained before the device fails.
On a Mac running Catalina or later (Big Sur), use Finder.

It isn’t showing up in Finder because it is disabled. But if you enabled automatic iCloud backups you should be able to restore from that.
