The Center Stage feature in FaceTime is only available on 2021 M1 iPad Pro Models or newer. Do you have the 2021 M1 iPad Pro model? If you do and you still do not see the Center Stage feature I suspect that you are using iPadOS 15 BETA. If you are then this is not the place to discuss BETA software. Please find the appropriate developers forum to post your question.
